Day One:
Estate Series Chardonnay
Experience the elegant expression of our vineyard with our Estate Series Chardonnay. With notes of crisp apple and a kiss of vanilla, it’s the ultimate wine for sophisticated holiday gatherings or as a thoughtful gift for wine lovers.
Butternut Squash Soup with Sage and Brown Butter
A creamy, festive starter that complements the crisp and elegant notes of Tres Colline’s Estate Chardonnay.
Why it pairs perfectly:
The creamy texture and nutty, herbal flavors of the soup enhance the Estate Chardonnay’s crisp acidity, while the roasted squash and sage bring out the wine’s subtle vanilla and apple notes. This pairing sets a sophisticated tone for any holiday gathering.
INGREDIENTS:
Ingredients:
2 tbsp unsalted butter
2 tbsp olive oil
1 med onion, diced
2 garlic cloves, minced
1 butternut squash (about 2 lbs), peeled, seeded, and cubed
4 cups vegetable broth
1/2 cup heavy cream
1/4 tsp ground nutmed
Salt and pepper to taste

INSTRUCTIONS:
Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and garlic, cooking until soft and fragrant, about 5 minutes.
Cook Squash: Add the butternut squash cubes and broth to the pot. Bring to a boil, then reduce heat to a simmer. Cook until the squash is tender, about 20 minutes.
Blend Soup: Use an immersion blender (or transfer to a blender in batches) to puree the soup until smooth. Stir in heavy cream, nutmeg, salt, and pepper. Simmer gently for another 5 minutes.
Make Sage Brown Butter: In a small skillet, melt the butter over medium heat. Add sage leaves and cook until the butter turns golden brown and fragrant, about 2-3 minutes. Remove from heat
Serve: Ladle the soup into bowls, drizzle with the sage brown butter, and garnish with crispy sage leaves or a sprinkle of nutmeg for a festive touch.

Day Two:
Estate Pinot Noir

Rosemary Garlic Lamb Chops
A refined, flavorful dish that pairs effortlessly with the earthy elegance and berry undertones of Tres Colline’s Estate Series Pinot Noir.

The rosemary and garlic enhance the lamb’s savory richness, complementing the Estate Series Pinot Noir’s smooth, earthy profile and vibrant red fruit notes for an unforgettable pairing.

4 lamb chops
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tsp fresh thyme leaves
Salt and pepper to taste
INSTRUCTIONS:
Season the Lamb:
Pat the lamb chops dry and season generously with salt and pepper on both sides.
Prepare Herb Mixture:
In a small bowl, mix olive oil, garlic, rosemary, and thyme.
Cook the Lamb:
Reduce the heat to medium, brush the lamb chops with the herb mixture, and cook for an additional 1-2 minutes per side for medium-rare (or longer for desired doneness).
Heat a large skillet over medium-high heat. Add the lamb chops and sear for 2-3 minutes per side until golden brown.
Rest and Serve:
Remove the lamb chops from the skillet and let them rest for 5 minutes. Serve warm.

Holiday Baked Brie with Honey, Walnuts & Thyme
A festive and flavorful starter that perfectly complements the bright citrus and subtle oak notes of Tres Colline’s Cuatro Chardonnay.

The creamy, nutty Brie and sweet honey enhance the Chardonnay’s elegant citrus and oak flavors, creating a harmonious pairing for holiday entertaining.

1 wheel of Brie cheese (8 oz)
2 tbsp honey
1/4 cup walnuts, chopped
1 tsp fresh thyme leaves
Crackers or baguette slices, for serving

INSTRUCTIONS:
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare the Brie: Place the Brie on a parchment-lined baking sheet or in a small oven-safe dish.
Top the Brie: Drizzle the honey over the top of the Brie. Sprinkle with walnuts and fresh thyme leaves.
Bake: Bake for 10-12 minutes, or until the Brie is soft and gooey in the center.
Serve: Carefully transfer the Brie to a serving plate and serve immediately with crackers or baguette slices.

Cuatro Pinot Noir

Wild Mushroom Risotto

The rich, earthy flavors of the wild mushrooms harmonize with the Cuatro Pinot Noir’s silky texture and subtle berry undertones, making this risotto an ideal side for a festive holiday meal.

1 cup Arborio rice
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
2 cups mixed wild mushrooms, chopped (e.g., cremini, shiitake, oyster)
1/2 cup dry white wine
4 cups chicken or vegetable broth, warmed
1/4 cup Parmesan cheese, grated
1 tbsp unsalted butter
1 tsp fresh thyme leaves
Salt and pepper to taste
INSTRUCTIONS:
Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking until softened, about 2 minutes. Stir in the mushrooms and thyme, cooking until the mushrooms are tender and slightly browned, about 5 minutes.
Toast the Rice: Add the Arborio rice to the skillet and stir for 1-2 minutes until the grains are lightly toasted.
Add Wine: Pour in the white wine and cook, stirring, until the liquid is mostly absorbed.
Cook the Risotto: Gradually add the warmed broth, one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more. Continue until the rice is tender and creamy, about 20 minutes.
Finish the Dish: Stir in Parmesan cheese, butter, and season with salt and pepper to taste.

A festive and elegant appetizer that pairs beautifully with the vibrant fruit notes and crisp finish of Tres Colline’s Estate Rosé

4 oz goat cheese, softened
1/4 cup pomegranate arils
2 tbsp pistachios, chopped
2 tbsp honey

INSTRUCTIONS:
Toast the Crostini: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and lightly brush with olive oil. Toast in the oven for 8-10 minutes, or until golden and crisp.
Prepare the Topping: In a small bowl, mix the pomegranate arils, chopped pistachios, and rosemary.
Assemble the Crostini: Spread a layer of goat cheese on each toasted baguette slice. Top with the pomegranate and pistachio mixture.
